High American cheese consumption is a result of deliberate marketing efforts. For about a century now the US has produced vastly more milk that the demand will support and subsidized it for political reasons that are now essentially untouchable entitlements for the various farm regions. There are a whole host of private, industry group, and tax funded government efforts to convince Americans to buy more dairy products. Cheese has been one of the more successful of them, alongside convincing the public drinking milk is good for you, and including dairy in all the official US food group/food pyramid etc nutritional recommendations.
And incidentally fondue sets do get used - they're great for melting the chocolate for various Christmas or Valentines Day chocolate dipped things.
